ANGEL HAIR PASTA.OMG! Great on Philips HR2357!

Delighted with Philips 2 Discs Angel Hair Pasta & Pappardelle Pasta for my older Philips pasta maker: HR2357.! I use Durham's Special Fancy Semolina Flour from Italy and made a double batch of Angel Egg Hair Paste. Worked great! I just ate a huge bowl of my homemade/organic Angel Hair Pasta Alfredo with clams and crab meat. Omg! It was out of this WORLD OF DELICIOUSNESS! I actually only wanted the Angel Hair disc because I like thinner noodles. It's the perfect size! We've got to get adventurous and try a recipe that calls for pappardelle pasta. But I've never cooked with her! So happy with my purchase! I recommend everyone to make their own pasta. So soft. Ready in minutes and absolutely FUN store-bought hard noodles straight from a pot of water! Here's a recipe for Angel Alfredo's Hair with Clams and Crabs! Finely dice 1/3 of a medium onion in 3-4 tablespoons EV olive oil in a skillet just above transparency. and sautรฉed with onions. then add 1 packet of diced butter and slowly melt in the pan along with the garlic and onion. Garlic/Onion/Oil Mixture. Add a pinch of ground nutmeg. Reduce the heat of the sauce to a very low simmer. Whisk together 1 or 2 egg yolks in a very small bowl, then slowly add to the oil, garlic, and cream sauce. While stirring slowly, keep the heat low again as you add the yolks so they don't cook separately and leave lumps. Egg yolk. Season with salt and pepper and simmer over low heat. Slowly add about 1.5 cups of freshly grated Parmesan and/or Parmesan Reggiano cheese and allow to dissolve in the sauce mixture. Then add freshly cooked clams or drained 2 cans chopped or whole clams and 2 cans drained crab meat. Mix well and turn off the heat. You can't add too much shellfish or crab. Well, technically you can, but just say so! Cook the noodles in a simmering pot of salted water. Cook until desired softness (cooks very quickly like fresh homemade pasta!). Remove the pasta from the water and drain the water (do not rinse the pasta). Add to the creamy alfredo. Sauce. Sprinkle with freshly chopped parsley and grated cheese, if you like. AND ENJOY! DOUBLE EGG PASTE RECIPE: Use a large spoon (with tiny holes in the bottom) and fill it twice with flour (= 600 grams); DO NOT pack or compact flour! Level with the tool or knife provided; I like to sieve the flour to make the noodles lighter and thinner and also use Durham Semolina's Extra Fancy Flour from Italy which is yellower, thinner and tastier! Place the flour in the basket of the pasta maker and cover with a lid. Now, using the smaller of the measuring spoons/containers, place 2 fresh whole eggs into the container first and mix/stir until the yolks and whites are combined. Now that the egg is mixed and still in the small container, add cool water to fill the "double loading line" on the container and stir gently. Set the machine to double portion mode, wait a second for it to start spinning and slowly pour the egg and water mixture through the hole in the lid where it is located. That's all! The machine does the rest! Simply cut the noodles about every 10-12 inches or whatever length you prefer! For this recipe, I use 3 or 4 extruders that are about 12 inches long. Makes about 5 servings.
