This is a really nice tool for chef-work

Not that I'm actually a chef, but I've been sharpening blades for over 40 years now, so can attest to the qualilty of the steel and the edge; this one is good. Aside from working with Japanese woodworking tools, I've been a home-cook afficianado for awhile, and moreso locked-down during the pandemic. This knife was a personal treat since I've been chopping so many vegetables and cooking at home and trying out things.I'd recommend this blade with some confidence to anyone who just wants an affordable way to enjoy some real quality in a tool that is used every day. I've had some good kitchen knives in my time, but this is the best so far. I bought this same knife and the smaller utility knife as a present for my daughter, who's been working as a restaurant server and alway had some interest in kitchen work herself. She was really haPPY.

Pros
  • WEIGHT/BALANCE- The balance point runs heel to spine up the billet. Allowing the user a comfortable grip with precise cuts, and less wear and tear on the users hands. The weight is towards the blade of the knife making for efficient use during rock chopping motion.
Cons
  • The blade may chip or break if used on hard surfaces
